Not So Kneady Dinner Rolls

Ingredients

- 1 tablespoon instant dry Yeast
- 1/2 cup warm (NOT HOT) Water
- 1/4 cup Sugar
- 1 tablespoon Honey
- 4 cups AP flour
- 1 teaspoon sea salt
- 1 cup room temperature milk
- 3 tbs butter (melted, but allowed to cool)
- 6 tbs Egg Whites
- 1/4 cup Caramelized Onions (optional)

To start, in a small bowl, mix yeast, warm water and honey. Let the yeast begin to ferment for five minutes, until a froth forms. If you keep it in a warmer room the process will happen faster. Colder rooms with stunt & elongate the process.

In a large bowl, sift Flour & add Sea Salt & Sugar. Make a well in the center. (just like making pasta)

In the well add in your Milk, Egg Whites, and Yeasty Water. Mix with a strong large spoon until everything is combined - the mixture will be sticky, so don’t add extra flour at this stage.

Take a kitchen towel and dampen with warm water, cover the dough and let the rest for a 90 minute nap. (it needs to double in size).

Once you approach the end of the resting period, spray a 9x13” baking pan with cooking spray. 

When the dough has doubled in size, give it a punch and place it on a floured surface. 

Cut the dough into 16 pieces and as you form each piece into a ball, add in diced caramelized onions should you choose to incorporate them.  At this stage if the dough is still sticky you can add flour as needed. Place the balls into your pan and spray top with cooking spray. 

Cover with your warm & damp kitchen down and let rise for another 30 minutes (again, it needs to double in size again)

Bake at 400° F for 20 minutes when the tops are golden brown.  Allow to cool to touch before breaking them apart and enjoying with melted butter or any topping of your choice!
