Add your Flour in the shape of a small hill to a surface you can get messy. In the middle of your hill, create a well with your two fingers that’s large enough to hold 2 whole eggs without spilling over.
Add your Eggs, Olive Oil & Sea Salt to the well and whisk gently with a fork until fully combined. Once combined, carve the inside of your well bringing Flour into the mixture little by little until the mixture is too thick to continue to mix with your fork.
Now take your hands and continue to combine the flour and wet ingredients, adding additional flour as needed should the pasta continue to be too sticky. You’re looking for the smooth consistency of Playdough.
Knead the dough for approximately 10 minutes. Once finished, allow to rest for at least 30 minutes in a bowl with flour at the base and a small drizzle of Olive Oil on top. Cover with a kitchen towel.
Store at room temperature if you will be cooking the pasta same day, or store in the fridge if you’re making for the next day.
