Sesame Coconut Rice

This rice the perfect complement to a spicy dish. It is so naturally sweet from the Coconut, but almost tastes like peanut butter with the nuttiness that is lended from the toasted sesame seeds. It’s the perfect complement to a spicy dish.

SESAME COCONUT RICE RECIPE BY MADE ON SUNDAYS

Ingredients

2 cups Brown Rice
2 cups Coconut Milk
2.5 cups Water
1 tsp Salt
1 tbs Coconut Oil
2 tbs Toasted Sesame Seeds

Begin by washing your rice until the water runs dry. This is done to remove the starches from the rice and allows your rice to be properly fluffy as opposed to chewy and potentially rubbery.

In a sauce pan combine washed Brown Rice, Coconut Milk, Water, Salt & Coconut Oil. Bring to a boil.

Once boiled, reduce the heat to a simmer and simmer for approximately 20 minutes (until the liquid is gone and the rice is cooked).

While the Rice is cooking toast Sesame Seeds in a medium-high heat pan shaking constantly so the seeds do not burn. Once golden, remove from heat and set aside.

Fluff the cooked rice and fold in toasted sesame seeds & serve along side your favorite protein or with this Chickpea Coconut Curry.
